Ingredients:
- 225g Spanish Chorizo link, sliced into 24 rounds
- 1 French Baguette, sliced into 24 thin rounds
- 30ml Extra Virgin Olive Oil
- 150g Plain Goat Cheese, softened
- 5ml Lemon zest, finely grated
- 2g Cracked black pepper
- 45ml Honey
- 5ml Chili flakes
- 5ml Apple cider vinegar
Instructions:
- Preheat oven to 200°C (400°F). Arrange baguette slices on a baking sheet, brush with olive oil, and bake for 5–7 minutes until golden brown.
- Place chorizo rounds in a cold skillet and turn heat to medium-high. Sear for 2–3 minutes per side until edges are crispy and fat is rendered.
- In a small bowl, blend softened goat cheese with lemon zest and black pepper. Spread one teaspoon of the mixture onto each cooled baguette round.
- Top each baguette with a seared chorizo slice.
- Whisk honey, chili flakes, and apple cider vinegar in a microwave-safe bowl. Heat for 20 seconds and drizzle over the assembled bites immediately.
