  1. Pat the steak cubes thoroughly dry using paper towels. Season generously with salt and pepper.
  2. Heat half the butter (3 Tbsp) and the olive oil in a large, heavy-bottomed skillet over medium-high heat until shimmering hot. Working in batches, sear the steak cubes on all sides until deeply browned (about 2-3 minutes per batch). Remove steak to a clean plate; set aside.
  3. Reduce the heat to medium-low. Add the remaining 3 tablespoons of butter to the skillet. Once melted, add the minced garlic. Sauté gently for about 60 seconds until fragrant.
  4. Pour in the Worcestershire sauce and lemon juice, scraping up any browned bits (the fond) from the bottom of the pan. Stir in the fresh parsley and thyme. Cook for 30 seconds until slightly thickened.
  5. Return the seared steak bites (and any resting juices) to the skillet. Toss everything vigorously to coat the steak thoroughly in the garlic butter sauce.
  6. Taste the sauce and adjust seasoning with a pinch more salt or pepper if needed. Serve immediately.
