Ingredients:
- 1 ¾ cups (160g) rolled oats
- ½ cup (120ml) milk (dairy or non-dairy alternative)
- ½ cup (100g) granulated sugar
- ¼ cup (60g) unsweetened cocoa powder
- ½ cup (125g) creamy peanut butter
- 1 tsp (5ml) vanilla extract
- A pinch of salt
Instructions:
- Combine the milk, sugar, cocoa powder, and salt in a medium saucepan.
- Heat over medium heat, stirring frequently until the mixture comes to a gentle boil.
- Boil for 1-2 minutes, ensuring the sugar dissolves completely and you achieve a slight thickening.
- Remove from heat and stir in the peanut butter and vanilla extract until smooth.
- Add the rolled oats, stirring to combine well.
- Scoop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Chill in the refrigerator for about 30 minutes, or until set.
