Ingredients:

  • 1 ¾ cups (160g) rolled oats
  • ½ cup (120ml) milk (dairy or non-dairy alternative)
  • ½ cup (100g) granulated sugar
  • ¼ cup (60g) unsweetened cocoa powder
  • ½ cup (125g) creamy peanut butter
  • 1 tsp (5ml) vanilla extract
  • A pinch of salt

Instructions:

  1. Combine the milk, sugar, cocoa powder, and salt in a medium saucepan.
  2. Heat over medium heat, stirring frequently until the mixture comes to a gentle boil.
  3. Boil for 1-2 minutes, ensuring the sugar dissolves completely and you achieve a slight thickening.
  4. Remove from heat and stir in the peanut butter and vanilla extract until smooth.
  5. Add the rolled oats, stirring to combine well.
  6. Scoop spoonfuls of the mixture onto a parchment-lined baking sheet.
  7. Chill in the refrigerator for about 30 minutes, or until set.
