Ingredients:
- 1 1/2 cups Dark Chocolate Sandwich Cookies (e.g., Oreos)
- 6 tbsp Unsalted Butter, melted
- 1/4 tsp Fine Sea Salt
- 8 oz Full-Fat Cream Cheese, softened
- 1 cup Smooth Peanut Butter
- 1 1/2 cups Icing Sugar (Confectioners' Sugar), sifted
- 1 tsp Pure Vanilla Extract
- 1 1/2 cups Heavy Cream (Double Cream), very cold
- 2 tbsp Chopped Roasted Peanuts (optional garnish)
- 1 oz Chocolate Shavings or Curls (optional garnish)
Instructions:
- Crush the chocolate cookies in a food processor until fine crumbs form. Alternatively, place them in a zip-top bag and smash them with a rolling pin.
- In a medium bowl, combine the cookie crumbs, melted butter, and salt. Mix until the crumbs are evenly moistened, resembling wet sand.
- Press the mixture firmly and evenly into the bottom and up the sides of the 9-inch pie dish. Use the flat bottom of a measuring cup or glass to achieve a tight, uniform base.
- Place the crust in the freezer for 15 minutes to set. For a firmer crust, you can bake it at 350°F / 175°C for 8-10 minutes, then cool completely.
- In a chilled bowl, use a stand or hand mixer to whip the very cold heavy cream until stiff peaks form. Set aside in the refrigerator.
- In a separate, large bowl, beat the softened cream cheese until smooth and lump-free (about 1 minute).
- Add the peanut butter and continue beating until fully incorporated and the mixture is fluffy.
- Gradually beat in the sifted icing sugar and vanilla extract until the mixture is light and aerated. Scrape down the sides of the bowl.
- Remove the whipped cream from the fridge. Using a large rubber spatula, gently fold the whipped cream into the peanut butter mixture in three additions. Use an under-and-over motion to combine, taking care not to knock the air out.
- Spoon the peanut butter filling evenly into the chilled crust. Smooth the top with the spatula.
- Cover the pie loosely with plastic wrap and refrigerate for a minimum of 4 hours, or preferably overnight, until the filling is fully set and holds its shape.
- Just before serving, garnish with chopped peanuts and chocolate shavings. Slice with a sharp knife dipped in hot water for clean cuts.
