Ingredients:

  • 1 1/2 cups Dark Chocolate Sandwich Cookies (e.g., Oreos)
  • 6 tbsp Unsalted Butter, melted
  • 1/4 tsp Fine Sea Salt
  • 8 oz Full-Fat Cream Cheese, softened
  • 1 cup Smooth Peanut Butter
  • 1 1/2 cups Icing Sugar (Confectioners' Sugar), sifted
  • 1 tsp Pure Vanilla Extract
  • 1 1/2 cups Heavy Cream (Double Cream), very cold
  • 2 tbsp Chopped Roasted Peanuts (optional garnish)
  • 1 oz Chocolate Shavings or Curls (optional garnish)

Instructions:

  1. Crush the chocolate cookies in a food processor until fine crumbs form. Alternatively, place them in a zip-top bag and smash them with a rolling pin.
  2. In a medium bowl, combine the cookie crumbs, melted butter, and salt. Mix until the crumbs are evenly moistened, resembling wet sand.
  3. Press the mixture firmly and evenly into the bottom and up the sides of the 9-inch pie dish. Use the flat bottom of a measuring cup or glass to achieve a tight, uniform base.
  4. Place the crust in the freezer for 15 minutes to set. For a firmer crust, you can bake it at 350°F / 175°C for 8-10 minutes, then cool completely.
  5. In a chilled bowl, use a stand or hand mixer to whip the very cold heavy cream until stiff peaks form. Set aside in the refrigerator.
  6. In a separate, large bowl, beat the softened cream cheese until smooth and lump-free (about 1 minute).
  7. Add the peanut butter and continue beating until fully incorporated and the mixture is fluffy.
  8. Gradually beat in the sifted icing sugar and vanilla extract until the mixture is light and aerated. Scrape down the sides of the bowl.
  9. Remove the whipped cream from the fridge. Using a large rubber spatula, gently fold the whipped cream into the peanut butter mixture in three additions. Use an under-and-over motion to combine, taking care not to knock the air out.
  10. Spoon the peanut butter filling evenly into the chilled crust. Smooth the top with the spatula.
  11. Cover the pie loosely with plastic wrap and refrigerate for a minimum of 4 hours, or preferably overnight, until the filling is fully set and holds its shape.
  12. Just before serving, garnish with chopped peanuts and chocolate shavings. Slice with a sharp knife dipped in hot water for clean cuts.
