Ingredients:
- 3/4 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 6 tablespoons packed brown sugar
- 3 tablespoons granulated sugar
- 1 large egg
- 1.25 cups all-purpose flour
- 1.5 cups old-fashioned rolled oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). Beat in the egg and vanilla extract until fully incorporated.
- In a separate medium bowl, whisk together the all-purpose flour, old-fashioned rolled oats, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
- Press the dough evenly into the prepared 8x8 inch pan. Ensure the surface is level.
- Bake for 20 minutes, or until the edges are lightly golden brown and a toothpick inserted near the center comes out with moist crumbs attached.
- Allow the bars to cool completely in the pan before lifting out using the parchment paper overhang and cutting into 12 equal bars.
