Ingredients:

  • 3/4 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 6 tablespoons packed brown sugar
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 1.25 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). Beat in the egg and vanilla extract until fully incorporated.
  3. In a separate medium bowl, whisk together the all-purpose flour, old-fashioned rolled oats, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  5. Press the dough evenly into the prepared 8x8 inch pan. Ensure the surface is level.
  6. Bake for 20 minutes, or until the edges are lightly golden brown and a toothpick inserted near the center comes out with moist crumbs attached.
  7. Allow the bars to cool completely in the pan before lifting out using the parchment paper overhang and cutting into 12 equal bars.
