Ingredients:
- 1 cup (227g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 cup (250g) creamy peanut butter (not natural style)
- 2-4 tablespoons (30-60ml) milk or heavy cream
- 1 teaspoon (5ml) vanilla extract
- Pinch of salt
Instructions:
- In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
- Add the peanut butter to the butter and beat until well combined. Scrape down the sides of the bowl as needed.
- With the mixer on low speed, gradually add the sifted powdered sugar, one cup at a time, beating well after each addition.
- Add the vanilla extract and salt and beat to combine.
- Add milk or heavy cream, one tablespoon at a time, until the icing reaches your desired consistency. Beat well after each addition.
- Beat the icing on medium-high speed for 1-2 minutes to make it light and fluffy.
- For a firmer icing, chill for 15 minutes before using (optional).
