Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 cup (250g) creamy peanut butter (not natural style)
  • 2-4 tablespoons (30-60ml) milk or heavy cream
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions:

  1. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
  2. Add the peanut butter to the butter and beat until well combined. Scrape down the sides of the bowl as needed.
  3. With the mixer on low speed, gradually add the sifted powdered sugar, one cup at a time, beating well after each addition.
  4. Add the vanilla extract and salt and beat to combine.
  5. Add milk or heavy cream, one tablespoon at a time, until the icing reaches your desired consistency. Beat well after each addition.
  6. Beat the icing on medium-high speed for 1-2 minutes to make it light and fluffy.
  7. For a firmer icing, chill for 15 minutes before using (optional).
