Ingredients:
- 9 cups Chex Cereal (Rice or Corn)
- 12 oz bag White Chocolate Chips
- 1 cup Creamy Peanut Butter
- 1/2 cup Unsalted Butter
- 1 teaspoon Vanilla Extract
- 2 cups Powdered Sugar (sifted)
Instructions:
- Measure the cereal into a large mixing bowl and set aside.
- Place the powdered sugar into a separate, medium bowl or a large, sturdy resealable plastic bag and set aside.
- Combine white chocolate chips, peanut butter, and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each burst, until completely smooth and melted. Do not overheat.
- Stir the vanilla extract into the melted coating mixture until fully incorporated.
- Pour the melted mixture immediately over the cereal in the large bowl. Gently fold the cereal until every piece is evenly coated. Work quickly but carefully.
- Transfer the coated cereal into the bowl or bag of powdered sugar. Gently toss or shake until the cereal is thoroughly dusted and resembles snowy clusters.
- Spread the finished chow mixture onto a baking sheet lined with parchment paper in a single layer. Allow it to cool completely at room temperature for about 30 minutes, or speed things up in the fridge for 15 minutes until the chocolate is set firm.
- Break up any large clusters gently. Store in an airtight container.
