Ingredients:

  • 9 cups Chex Cereal (Rice or Corn)
  • 12 oz bag White Chocolate Chips
  • 1 cup Creamy Peanut Butter
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 2 cups Powdered Sugar (sifted)

Instructions:

  1. Measure the cereal into a large mixing bowl and set aside.
  2. Place the powdered sugar into a separate, medium bowl or a large, sturdy resealable plastic bag and set aside.
  3. Combine white chocolate chips, peanut butter, and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each burst, until completely smooth and melted. Do not overheat.
  4. Stir the vanilla extract into the melted coating mixture until fully incorporated.
  5. Pour the melted mixture immediately over the cereal in the large bowl. Gently fold the cereal until every piece is evenly coated. Work quickly but carefully.
  6. Transfer the coated cereal into the bowl or bag of powdered sugar. Gently toss or shake until the cereal is thoroughly dusted and resembles snowy clusters.
  7. Spread the finished chow mixture onto a baking sheet lined with parchment paper in a single layer. Allow it to cool completely at room temperature for about 30 minutes, or speed things up in the fridge for 15 minutes until the chocolate is set firm.
  8. Break up any large clusters gently. Store in an airtight container.
