Ingredients:
- 1 ½ cups all-purpose flour (190g)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg (optional)
- ½ cup vegetable oil (120ml)
- 1 cup granulated sugar (200g)
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups grated zucchini (about 1 medium zucchini, excess moisture squeezed out)
- ½ cup chopped nuts (walnuts or pecans, optional)
- ½ cup chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by greasing it or lining it with parchment paper.
- Combine dry ingredients in a bowl: flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk until well mixed.
- Mix wet ingredients in a separate bowl: oil, sugar, eggs, and vanilla. Beat until combined.
- Fold in zucchini into the wet mixture.
- Add dry ingredients to the wet mixture in two batches, stirring gently until just combined. (Do not overmix!)
- Incorporate optional mix-ins if desired.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
