Ingredients:

  • 1 ½ cups all-purpose flour (190g)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg (optional)
  • ½ cup vegetable oil (120ml)
  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini, excess moisture squeezed out)
  • ½ cup chopped nuts (walnuts or pecans, optional)
  • ½ cup chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. Combine dry ingredients in a bowl: flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk until well mixed.
  4. Mix wet ingredients in a separate bowl: oil, sugar, eggs, and vanilla. Beat until combined.
  5. Fold in zucchini into the wet mixture.
  6. Add dry ingredients to the wet mixture in two batches, stirring gently until just combined. (Do not overmix!)
  7. Incorporate optional mix-ins if desired.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
