Ingredients:
- 2 large eggs
- ¼ cup whole milk
- ¼ teaspoon ground cinnamon
- Pinch of salt
- 4 slices of brioche bread
- 2 tablespoons unsalted butter
- 2 tablespoons unsalted butter
- 1 tablespoon all-purpose flour
- 1 cup whole milk
- ¼ teaspoon Dijon mustard
- 2 tablespoons grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Instructions:
- Whisk together the eggs, milk, cinnamon, and salt in a shallow dish.
- Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly coated. Don't over-soak!
- Melt butter in a large non-stick frying pan over medium heat.
- Place the soaked bread in the hot pan, making sure not to overcrowd it. Cook for 2-3 minutes per side, until golden brown and cooked through.
- Remove the eggy bread from the pan and cut each slice into bite-sized pieces (soldiers!).
- Melt butter in a small saucepan over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk until smooth.
- Bring the sauce to a simmer, stirring constantly, until it thickens slightly.
- Stir in Dijon mustard and Parmesan cheese. Season with salt and pepper to taste.
- Serve the eggy bread bites hot, with the dipping sauce on the side.
