Ingredients:

  • 2 large eggs
  • ¼ cup whole milk
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 4 slices of brioche bread
  • 2 tablespoons unsalted butter
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • ¼ teaspoon Dijon mustard
  • 2 tablespoons grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Whisk together the eggs, milk, cinnamon, and salt in a shallow dish.
  2. Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly coated. Don't over-soak!
  3. Melt butter in a large non-stick frying pan over medium heat.
  4. Place the soaked bread in the hot pan, making sure not to overcrowd it. Cook for 2-3 minutes per side, until golden brown and cooked through.
  5. Remove the eggy bread from the pan and cut each slice into bite-sized pieces (soldiers!).
  6. Melt butter in a small saucepan over medium heat.
  7. Whisk in the flour and cook for 1 minute, stirring constantly.
  8. Gradually whisk in the milk until smooth.
  9. Bring the sauce to a simmer, stirring constantly, until it thickens slightly.
  10. Stir in Dijon mustard and Parmesan cheese. Season with salt and pepper to taste.
  11. Serve the eggy bread bites hot, with the dipping sauce on the side.
