Ingredients:
- 1 sheet (14.1 oz / 400g) store-bought puff pastry, thawed (but still cold!)
- 1 large egg, beaten (for egg wash)
- 2 tablespoons Everything Bagel Seasoning
- 4 oz (113g) cream cheese, softened
- 1/2 cup (113g) ricotta cheese
- 1/4 cup (30g) shredded cheddar cheese
- 1/4 cup (15g) chopped fresh chives
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: 1-2 tablespoons chopped cooked bacon or ham (for extra flavour)
Instructions:
- In a mixing bowl, combine softened cream cheese, ricotta cheese, cheddar cheese, chives, minced garlic, salt, and pepper (and bacon/ham, if using). Mix well until smooth and evenly combined.
- Gently unfold the thawed puff pastry sheet on a lightly floured surface. Using a rolling pin (optional), lightly roll the pastry to slightly enlarge it, aiming for a rectangular shape.
- Using a pizza cutter or sharp knife, cut the pastry into evenly sized squares or rectangles (aim for 6-8 pieces).
- Place a spoonful of the cheese filling in the center of each pastry square.
- Fold one half of the pastry over the filling to create a triangle or rectangle. Press the edges firmly with a fork to seal.
- Brush the top of each hand pie with the beaten egg. Generously sprinkle with Everything Bagel Seasoning.
- Place the hand pies on a baking sheet lined with parchment paper or a silicone mat. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and puffed.
- Let the hand pies cool slightly on the baking sheet before serving.
