Ingredients:

  • 1 baguette, sliced into ½-inch thick rounds (approx. 12-16 slices)
  • 2 tablespoons olive oil (30 ml)
  • 4 ounces (115g) brie cheese, rind removed, cut into small pieces
  • ½ cup (120ml) prepared cranberry sauce
  • 2 tablespoons (30 ml) chopped fresh rosemary (optional, for garnish)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and season lightly with salt and pepper.
  2. Arrange the baguette slices in a single layer on the baking sheet and bake for 8-10 minutes, or until golden brown and crisp.
  3. Remove the crostini from the oven. Top each slice with a piece of brie.
  4. Return the baking sheet to the oven and bake for 2-3 minutes, or until the brie is softened and slightly melted.
  5. Remove from the oven and top each crostini with a spoonful of cranberry sauce. Garnish with fresh rosemary, if desired, and serve immediately.
