Ingredients:

  • 3 cups (710 ml) Pure Cranberry Juice (unsweetened)
  • 1 cup (240 ml) Water
  • 1/2 cup (100 g) Granulated Sugar
  • 3 large Cinnamon Sticks
  • 1 tsp Whole Cloves
  • 4 pods Star Anise
  • Zest of 1 large orange
  • 2 cups (475 ml) Orange Juice (chilled)
  • 1/4 cup (60 ml) Lemon Juice
  • 1/2 cup (120 ml) Pomegranate Juice (or grenadine syrup)
  • 3 cups (710 ml) Ginger Ale (dry) or Sparkling Cider (very cold)
  • Optional: 1 to 1.5 cups Dark Rum, Brandy, or Cognac
  • Fresh Cranberries (for garnish)
  • Orange Slices (for garnish)
  • Rosemary Sprigs (for garnish)

Instructions:

  1. Simmer the Spices: In a saucepan, combine the cranberry juice, water, granulated sugar, cinnamon sticks, whole cloves, star anise, and orange zest.
  2. Infuse: Bring the mixture to a gentle simmer over medium heat, stirring until the sugar is dissolved. Once simmering, reduce the heat to low and let it steep for 8 to 10 minutes.
  3. Cool and Strain: Remove the saucepan from the heat. Allow the mixture to cool for 15 minutes. Pour the concentrate through a fine-mesh sieve or muslin cloth into a heatproof bowl, discarding all the solids.
  4. Chill: Cover the spiced concentrate and refrigerate until completely cold (minimum 2 hours, or overnight). This step is crucial for flavor development.
  5. Combine Juices: Once the spiced concentrate is thoroughly chilled, pour it into your main punch bowl or serving vessel. Stir in the orange juice, lemon juice, and pomegranate juice/syrup.
  6. Add Alcohol (Optional): If using spirits, stir in the dark rum or brandy now. Keep the punch base chilled until the moment you are ready to serve.
  7. Add Ice: Fill the punch bowl with a generous amount of ice (ideally an ice ring or large blocks to minimize dilution).
  8. Add Fizz: Just before guests arrive or just prior to serving, gently pour in the chilled ginger ale or sparkling cider. Stir gently once or twice.
  9. Garnish: Float the fresh cranberries and orange slices on top of the punch. Add a few small rosemary sprigs for a festive aroma and visual flair. Serve immediately with a ladle.
