Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 blend)
  • 1 medium yellow onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (16 ounce) jar salsa
  • 8-10 (6-inch) flour tortillas
  • 2 cups shredded cheddar cheese
  • Optional Toppings: Sour cream, guacamole, chopped cilantro, sliced green onions

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and chopped onion. Cook until beef is browned and onion is softened. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Stir in black beans and corn. Cook for an additional 2 minutes.
  5. Spread a thin layer of salsa on the bottom of the baking dish.
  6. Arrange 2-3 tortillas to cover the bottom of the dish.
  7. Spread half of the beef mixture evenly over the tortillas.
  8. Sprinkle half of the cheddar cheese over the beef mixture.
  9. Repeat layers with tortillas, remaining beef mixture, and remaining cheese.
  10. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  11. Let stand for 5-10 minutes before slicing and serving.
  12. Top with your favourite taco toppings.
