Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 blend)
- 1 medium yellow onion, chopped
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 1 (16 ounce) jar salsa
- 8-10 (6-inch) flour tortillas
- 2 cups shredded cheddar cheese
- Optional Toppings: Sour cream, guacamole, chopped cilantro, sliced green onions
Instructions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add ground beef and chopped onion. Cook until beef is browned and onion is softened. Drain off any excess grease.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
- Stir in black beans and corn. Cook for an additional 2 minutes.
- Spread a thin layer of salsa on the bottom of the baking dish.
- Arrange 2-3 tortillas to cover the bottom of the dish.
- Spread half of the beef mixture evenly over the tortillas.
- Sprinkle half of the cheddar cheese over the beef mixture.
- Repeat layers with tortillas, remaining beef mixture, and remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Let stand for 5-10 minutes before slicing and serving.
- Top with your favourite taco toppings.
