Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 3 tablespoons (36g) granulated sugar
- 1 ½ teaspoons baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups (360ml) buttermilk, well-shaken
- 2 large eggs
- 3 tablespoons (42g) unsalted butter, melted and slightly cooled, plus more for greasing the griddle
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl or liquid measuring cup, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients. Stir just until combined. Don't overmix! A few lumps are okay.
- Heat a lightly oiled griddle or frying pan over medium heat. A drop of water should sizzle gently when it hits the surface.
- Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip when ready.
- Place cooked pancakes in a warm oven (200°F/95°C) while you finish cooking the rest of the batch, or serve immediately.
