Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 3 tablespoons (36g) granulated sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups (360ml) buttermilk, well-shaken
  • 2 large eggs
  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled, plus more for greasing the griddle
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl or liquid measuring cup, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Stir just until combined. Don't overmix! A few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat. A drop of water should sizzle gently when it hits the surface.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip when ready.
  6. Place cooked pancakes in a warm oven (200°F/95°C) while you finish cooking the rest of the batch, or serve immediately.
