Ingredients:
- 2 cups (240g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup (120ml) whole milk, warmed
- 1 large egg
- 1/4 cup (60g) unsalted butter, melted
- Seeds from 1 vanilla bean (or 1 tsp vanilla extract)
- 1 1/2 cups (180g) powdered sugar
- 2–3 tbsp whole milk
- 1/2 tsp vanilla extract
- Vegetable oil for frying
Instructions:
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together warmed milk, egg, melted butter, and vanilla bean seeds.
- Make a well in the center of the dry ingredient mixture, pour in the wet mix, and stir until combined. Knead gently for 2-3 minutes until a soft dough forms.
- Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
- Roll out the dough on a floured surface to about 1/2 inch thick. Cut out shapes using a doughnut cutter.
- In a deep fryer or pot, heat vegetable oil to 350°F (175°C).
- Carefully drop doughnuts into the hot oil, frying a few at a time for 2-3 minutes on each side until golden brown. Use a wire spider or slotted spoon to remove and let drain on a cooling rack.
- In a bowl, whisk powdered sugar, milk, and vanilla extract until smooth.
- Dip cooled doughnuts in the glaze and let them set on a wire rack.
