Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (120ml) whole milk, warmed
  • 1 large egg
  • 1/4 cup (60g) unsalted butter, melted
  • Seeds from 1 vanilla bean (or 1 tsp vanilla extract)
  • 1 1/2 cups (180g) powdered sugar
  • 2–3 tbsp whole milk
  • 1/2 tsp vanilla extract
  • Vegetable oil for frying

Instructions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together warmed milk, egg, melted butter, and vanilla bean seeds.
  3. Make a well in the center of the dry ingredient mixture, pour in the wet mix, and stir until combined. Knead gently for 2-3 minutes until a soft dough forms.
  4. Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
  5. Roll out the dough on a floured surface to about 1/2 inch thick. Cut out shapes using a doughnut cutter.
  6. In a deep fryer or pot, heat vegetable oil to 350°F (175°C).
  7. Carefully drop doughnuts into the hot oil, frying a few at a time for 2-3 minutes on each side until golden brown. Use a wire spider or slotted spoon to remove and let drain on a cooling rack.
  8. In a bowl, whisk powdered sugar, milk, and vanilla extract until smooth.
  9. Dip cooled doughnuts in the glaze and let them set on a wire rack.
