Ingredients:

  • 2 slices focaccia bread (about 1 inch thick), preferably day-old (approx. 100g/3.5oz total)
  • 2 tablespoons extra virgin olive oil (30ml / 1 fl oz)
  • Pinch of sea salt flakes
  • Pinch of freshly ground black pepper
  • 1/2 ripe avocado, mashed (approx. 75g / 2.6oz)
  • 2 tablespoons crumbled feta cheese (approx. 30g / 1 oz)
  • 1/4 cup cherry tomatoes, halved (approx. 50g / 1.75oz)
  • 1 tablespoon finely chopped fresh basil (approx. 5g/0.2oz)
  • 1 teaspoon balsamic glaze (15ml / 0.5 fl oz) (optional)
  • Red pepper flakes (optional, to taste)

Instructions:

  1. Drizzle focaccia slices with olive oil, sprinkle with sea salt and pepper.
  2. Toast focaccia in a toaster until golden brown and crispy (or grill pan, same result). Watch it carefully to avoid burning.
  3. In a small bowl, gently mash the avocado with a fork.
  4. Spread mashed avocado evenly over toasted Focaccia Toast.
  5. Sprinkle with feta cheese, cherry tomatoes, and basil.
  6. Drizzle with balsamic glaze and sprinkle with red pepper flakes (if using).
  7. Serve your Focaccia Fiesta Toast immediately while it's still warm and crispy.
