Ingredients:
- 2 slices focaccia bread (about 1 inch thick), preferably day-old (approx. 100g/3.5oz total)
- 2 tablespoons extra virgin olive oil (30ml / 1 fl oz)
- Pinch of sea salt flakes
- Pinch of freshly ground black pepper
- 1/2 ripe avocado, mashed (approx. 75g / 2.6oz)
- 2 tablespoons crumbled feta cheese (approx. 30g / 1 oz)
- 1/4 cup cherry tomatoes, halved (approx. 50g / 1.75oz)
- 1 tablespoon finely chopped fresh basil (approx. 5g/0.2oz)
- 1 teaspoon balsamic glaze (15ml / 0.5 fl oz) (optional)
- Red pepper flakes (optional, to taste)
Instructions:
- Drizzle focaccia slices with olive oil, sprinkle with sea salt and pepper.
- Toast focaccia in a toaster until golden brown and crispy (or grill pan, same result). Watch it carefully to avoid burning.
- In a small bowl, gently mash the avocado with a fork.
- Spread mashed avocado evenly over toasted Focaccia Toast.
- Sprinkle with feta cheese, cherry tomatoes, and basil.
- Drizzle with balsamic glaze and sprinkle with red pepper flakes (if using).
- Serve your Focaccia Fiesta Toast immediately while it's still warm and crispy.
