Ingredients:
- 1 pound fresh white fish (such as tilapia or snapper), diced
- 1 cup fresh lime juice (about 6-8 limes)
- 1 small red onion, finely chopped
- 1 medium ripe tomato, diced
- 1 medium cucumber, peeled and diced
- 1-2 jalapeño peppers, finely chopped (to taste)
- 1/2 cup fresh cilantro, chopped
- Salt to taste
- 1 avocado, diced for garnish (optional)
- Tortilla chips for serving (optional)
Instructions:
- Dice the fresh fish into uniform ½-inch pieces and transfer to a mixing bowl.
- Pour lime juice over the diced fish, ensuring all pieces are submerged. Cover and refrigerate for 30 minutes, stirring occasionally.
- While the fish is marinating, finely chop the red onion, tomato, cucumber, and jalapeño.
- After the fish has cooked in the lime juice, drain excess juice if desired. Gently fold in the chopped vegetables and cilantro. Season with salt to taste.
- Transfer the ceviche to a serving bowl. Garnish with diced avocado if using, and serve immediately with tortilla chips.
