Ingredients:

  • 1 pound fresh white fish (such as tilapia or snapper), diced
  • 1 cup fresh lime juice (about 6-8 limes)
  • 1 small red onion, finely chopped
  • 1 medium ripe tomato, diced
  • 1 medium cucumber, peeled and diced
  • 1-2 jalapeño peppers, finely chopped (to taste)
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste
  • 1 avocado, diced for garnish (optional)
  • Tortilla chips for serving (optional)

Instructions:

  1. Dice the fresh fish into uniform ½-inch pieces and transfer to a mixing bowl.
  2. Pour lime juice over the diced fish, ensuring all pieces are submerged. Cover and refrigerate for 30 minutes, stirring occasionally.
  3. While the fish is marinating, finely chop the red onion, tomato, cucumber, and jalapeño.
  4. After the fish has cooked in the lime juice, drain excess juice if desired. Gently fold in the chopped vegetables and cilantro. Season with salt to taste.
  5. Transfer the ceviche to a serving bowl. Garnish with diced avocado if using, and serve immediately with tortilla chips.
