Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg
  • 1/2 cup jalapeños, diced
  • 1/4 cup green onions, finely chopped (optional)
  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda, salt, and pepper.
  2. In another bowl, whisk together the buttermilk and egg.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the diced jalapeños and green onions.
  5. Let the batter rest for 30 minutes at room temperature.
  6. Heat the vegetable oil to 350°F (175°C) in a deep fryer or pot.
  7. Drop tablespoon-sized portions of batter into the hot oil and fry until golden brown, about 3-4 minutes.
  8. Transfer the hush puppies to a paper towel-lined baking sheet to drain excess oil.
  9. Serve hot with your choice of dipping sauce.
