Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup buttermilk
- 1 large egg
- 1/2 cup jalapeños, diced
- 1/4 cup green onions, finely chopped (optional)
- Vegetable oil for frying
Instructions:
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda, salt, and pepper.
- In another bowl, whisk together the buttermilk and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced jalapeños and green onions.
- Let the batter rest for 30 minutes at room temperature.
- Heat the vegetable oil to 350°F (175°C) in a deep fryer or pot.
- Drop tablespoon-sized portions of batter into the hot oil and fry until golden brown, about 3-4 minutes.
- Transfer the hush puppies to a paper towel-lined baking sheet to drain excess oil.
- Serve hot with your choice of dipping sauce.
