Ingredients:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1 large egg (for batter)
- 1 cup crushed graham crackers (for coating)
- 2 cups fresh strawberries, diced
- Vegetable oil, for frying
- Powdered sugar, for dusting (optional)
Instructions:
- In a bowl, combine softened cream cheese, sugar, and vanilla. Mix until smooth. Add the egg and mix until well incorporated. Chill for 30 minutes.
- Scoop spoonfuls of the cheesecake filling onto parchment paper, shaping into small balls. Place back in the refrigerator to firm up.
- In a mixing bowl, whisk together flour, cornstarch, baking powder, and salt. In a separate bowl, combine milk and egg to create the batter.
- In a frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
- Dip each cheesecake ball into the batter, then roll in crushed graham crackers. Fry in hot oil until golden brown, about 2-3 minutes. Remove and drain.
- Dust with powdered sugar, if desired, and serve warm with diced strawberries on top.
