Ingredients:

  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1 large egg (for batter)
  • 1 cup crushed graham crackers (for coating)
  • 2 cups fresh strawberries, diced
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)

Instructions:

  1. In a bowl, combine softened cream cheese, sugar, and vanilla. Mix until smooth. Add the egg and mix until well incorporated. Chill for 30 minutes.
  2. Scoop spoonfuls of the cheesecake filling onto parchment paper, shaping into small balls. Place back in the refrigerator to firm up.
  3. In a mixing bowl, whisk together flour, cornstarch, baking powder, and salt. In a separate bowl, combine milk and egg to create the batter.
  4. In a frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
  5. Dip each cheesecake ball into the batter, then roll in crushed graham crackers. Fry in hot oil until golden brown, about 2-3 minutes. Remove and drain.
  6. Dust with powdered sugar, if desired, and serve warm with diced strawberries on top.
