Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ½ teaspoon salt
  • 3 cups rolled oats
  • 4 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Fold in the rolled oats until evenly distributed.
  7. Chill the dough in the fridge for about 30 minutes.
  8. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, or until edges are golden brown.
  10. Allow cookies to cool completely on a wire rack.
  11. Prepare frosting by creaming together powdered sugar and butter, then add milk until desired consistency is reached. Stir in vanilla extract.
  12. Frost cooled cookies and allow the icing to set.
