Ingredients:
- 2 cups cooked rice (day-old rice works best)
- 1 large egg, beaten
- ½ cup finely chopped green onions
- ½ cup grated cheese (like cheddar or mozzarella)
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ cup vegetable oil (or enough to shallow fry)
Instructions:
- In a mixing bowl, combine cooked rice, beaten egg, green onions, grated cheese, soy sauce, garlic powder, salt, and black pepper. Mix until ingredients are evenly distributed.
- Using your hands, shape the mixture into small, flat patties, about 1-2 inches in diameter. Ensure they are compact for better frying results.
- In a frying pan, heat vegetable oil over medium heat until shimmering but not smoking.
- Carefully place the rice patties in the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Use a slotted spoon to transfer the rice bites to a plate lined with paper towels to drain excess oil. Serve warm.
