Ingredients:

  • 2 cups cooked rice (day-old rice works best)
  • 1 large egg, beaten
  • ½ cup finely chopped green onions
  • ½ cup grated cheese (like cheddar or mozzarella)
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ cup vegetable oil (or enough to shallow fry)

Instructions:

  1. In a mixing bowl, combine cooked rice, beaten egg, green onions, grated cheese, soy sauce, garlic powder, salt, and black pepper. Mix until ingredients are evenly distributed.
  2. Using your hands, shape the mixture into small, flat patties, about 1-2 inches in diameter. Ensure they are compact for better frying results.
  3. In a frying pan, heat vegetable oil over medium heat until shimmering but not smoking.
  4. Carefully place the rice patties in the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  5. Use a slotted spoon to transfer the rice bites to a plate lined with paper towels to drain excess oil. Serve warm.
