Ingredients:

  • 2 cups sushi rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 12 ounces Spam, cut into 8 slices
  • 4 sheets nori
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil for frying

Instructions:

  1. Rinse sushi rice until water runs clear.
  2. Combine rice and water in a saucepan; bring to a boil.
  3. Lower the heat, cover, and simmer for 20 minutes until water is absorbed.
  4. Let sit covered for 10 minutes, then fluff with a fork.
  5. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  6. Fold mixture into the rice gently and allow to cool.
  7. In a frying pan, heat vegetable oil over medium heat.
  8. Add Spam slices and cook until golden brown on each side, about 3-4 minutes.
  9. If using a musubi mold, line it with plastic wrap.
  10. Press a layer of rice into the mold, then add a slice of Spam.
  11. Top with another layer of rice and press firmly.
  12. Wrap with a strip of nori and slice if desired.
  13. Heat oil in a clean pan over medium heat.
  14. Place musubi seam-side down and fry until the nori is crispy, about 2-3 minutes per side.
  15. Slice into halves or quarters and enjoy warm with soy sauce for dipping.
