Ingredients:
- 2 cups sushi rice
- 2 ½ cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- 12 ounces Spam, cut into 8 slices
- 4 sheets nori
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil for frying
Instructions:
- Rinse sushi rice until water runs clear.
- Combine rice and water in a saucepan; bring to a boil.
- Lower the heat, cover, and simmer for 20 minutes until water is absorbed.
- Let sit covered for 10 minutes, then fluff with a fork.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Fold mixture into the rice gently and allow to cool.
- In a frying pan, heat vegetable oil over medium heat.
- Add Spam slices and cook until golden brown on each side, about 3-4 minutes.
- If using a musubi mold, line it with plastic wrap.
- Press a layer of rice into the mold, then add a slice of Spam.
- Top with another layer of rice and press firmly.
- Wrap with a strip of nori and slice if desired.
- Heat oil in a clean pan over medium heat.
- Place musubi seam-side down and fry until the nori is crispy, about 2-3 minutes per side.
- Slice into halves or quarters and enjoy warm with soy sauce for dipping.
