Ingredients:

  • 1 lb lean ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 16 oz processed cheese product, cubed
  • 4 oz cream cheese, softened and cubed
  • 1 can (14.5 oz) diced tomatoes and green chiles, undrained
  • 2 tbsp chopped fresh cilantro

Instructions:

  1. Place the skillet over medium-high heat. Add the ground beef and cook, breaking it apart with your spatula, until the meat is deeply browned and no longer pink.
  2. Stir in the garlic powder, onion powder, salt, and pepper. Drain any excess grease to prevent an oily dip.
  3. Pour in the entire can of diced tomatoes and green chiles, including the juices. Simmer for 3–5 minutes until the liquid reduces slightly and the tomatoes are softened.
  4. Reduce heat to medium-low. Add the cubed processed cheese and cream cheese.
  5. Stir constantly in a circular motion until the cheese is completely incorporated and the sauce is glossy and smooth.
  6. Remove from heat immediately once melted to avoid scorching and garnish with chopped fresh cilantro.
