Ingredients:
- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 3 tablespoons unsalted butter
- 3 cloves garlic (minced)
- ½ cup BBQ sauce (store-bought or homemade)
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar (optional, for tanginess)
- 8 small flour or corn tortillas
- Toppings of choice: Shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, sour cream, cilantro, lime wedges
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the skillet and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant. Stir in BBQ sauce, honey, and optional apple cider vinegar; whisk until smooth. Return cooked chicken to skillet, tossing to coat evenly in the sauce. Simmer for 2–3 minutes until slightly thickened.
- Heat tortillas in a dry skillet, on a griddle, or wrapped in foil in the oven until soft and pliable.
- Divide the garlic butter honey BBQ chicken among warmed tortillas. Top with desired toppings (e.g., shredded lettuce, diced tomatoes, avocado). Garnish with cilantro and lime juice.
- Serve tacos immediately with extra lime wedges on the side. Relish the flavor-packed experience!
