Ingredients:

  • 1 lb fresh asparagus spears, woody ends trimmed
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 cup parmesan cheese, finely grated
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1 tsp fresh lemon juice

Instructions:

  1. Preheat your oven to 400°F (200°C). Wash the asparagus and pat it completely dry. Trim about 1-2 inches off the bottom of the stems where they become woody and tough.
  2. In a large mixing bowl, combine the trimmed asparagus, olive oil, minced garlic, salt, and black pepper. Toss vigorously until the spears are glossy and the garlic is evenly distributed.
  3. Spread the asparagus in a single layer on a prepared baking sheet, ensuring they are not crowded. Roast for 8-10 minutes.
  4. Remove the pan from the oven and sprinkle the grated Parmesan evenly over the spears. Return to the oven for another 2-3 minutes, or until the cheese is melted and forms a golden crust.
  5. Immediately after removing from the oven, drizzle with fresh lemon juice.
