Ingredients:
- 1 lb fresh asparagus spears, woody ends trimmed
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 cup parmesan cheese, finely grated
- 1/2 tsp sea salt
- 1/4 tsp freshly cracked black pepper
- 1 tsp fresh lemon juice
Instructions:
- Preheat your oven to 400°F (200°C). Wash the asparagus and pat it completely dry. Trim about 1-2 inches off the bottom of the stems where they become woody and tough.
- In a large mixing bowl, combine the trimmed asparagus, olive oil, minced garlic, salt, and black pepper. Toss vigorously until the spears are glossy and the garlic is evenly distributed.
- Spread the asparagus in a single layer on a prepared baking sheet, ensuring they are not crowded. Roast for 8-10 minutes.
- Remove the pan from the oven and sprinkle the grated Parmesan evenly over the spears. Return to the oven for another 2-3 minutes, or until the cheese is melted and forms a golden crust.
- Immediately after removing from the oven, drizzle with fresh lemon juice.
