Ingredients:

  • 1 ½ cups (192g) whole wheat flour (or spelt flour)
  • 1 teaspoon baking soda (5ml)
  • ½ teaspoon ground cinnamon (2.5ml)
  • ¼ teaspoon ground nutmeg (1.25ml)
  • ¼ teaspoon salt (1.5g)
  • 3 very ripe bananas, mashed (approx. 1 ½ cups/340g)
  • ⅓ cup (80ml) unsweetened applesauce
  • ¼ cup (60ml) melted coconut oil (or other neutral oil)
  • 2 large eggs (approx. 100g)
  • 2 tablespoons maple syrup (30ml)
  • 1 teaspoon vanilla extract (5ml)
  • ½ cup (85g) chopped walnuts or pecans (optional)
  • ½ cup (85g) chocolate chips (dark or semi-sweet, optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the loaf pan (or line with parchment paper).
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mash the bananas. Add the applesauce, melted coconut oil, eggs, maple syrup, and vanilla extract. Whisk until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix!
  5. Gently fold in the walnuts/pecans and/or chocolate chips, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
