Ingredients:
- 1 ½ cups (192g) whole wheat flour (or spelt flour)
- 1 teaspoon baking soda (5ml)
- ½ teaspoon ground cinnamon (2.5ml)
- ¼ teaspoon ground nutmeg (1.25ml)
- ¼ teaspoon salt (1.5g)
- 3 very ripe bananas, mashed (approx. 1 ½ cups/340g)
- ⅓ cup (80ml) unsweetened applesauce
- ¼ cup (60ml) melted coconut oil (or other neutral oil)
- 2 large eggs (approx. 100g)
- 2 tablespoons maple syrup (30ml)
- 1 teaspoon vanilla extract (5ml)
- ½ cup (85g) chopped walnuts or pecans (optional)
- ½ cup (85g) chocolate chips (dark or semi-sweet, optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan (or line with parchment paper).
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mash the bananas. Add the applesauce, melted coconut oil, eggs, maple syrup, and vanilla extract. Whisk until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix!
- Gently fold in the walnuts/pecans and/or chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
