Ingredients:
- 4 kielbasa sausages (about 6 oz each, preferably smoked)
- 4 hoagie or submarine rolls
- Sliced pickles (for garnish)
- Chopped fresh parsley (for garnish, optional)
- 1/2 cup Dijon mustard
- 1-2 jalapeños, finely chopped (adjust to taste)
- 1 tablespoon mayonnaise
- 1 tablespoon honey
- Salt and pepper, to taste
Instructions:
- In a mixing bowl, combine Dijon mustard, chopped jalapeños, mayonnaise, honey, and season with salt and pepper. Mix well and set aside.
- Preheat the grill or grill pan to medium-high heat.
- Grill the kielbasa sausages for about 5-7 minutes, turning occasionally, or until they are heated through and have grill marks.
- Split the hoagie rolls and place them on the grill for 1-2 minutes, cut side down, until lightly toasted.
- Place a grilled kielbasa in each toasted roll. Generously spread the zesty mustard-jalapeño mixture on top.
- Add sliced pickles and a sprinkle of fresh parsley if desired. Serve immediately.
