Ingredients:

  • 4 kielbasa sausages (about 6 oz each, preferably smoked)
  • 4 hoagie or submarine rolls
  • Sliced pickles (for garnish)
  • Chopped fresh parsley (for garnish, optional)
  • 1/2 cup Dijon mustard
  • 1-2 jalapeños, finely chopped (adjust to taste)
  • 1 tablespoon mayonnaise
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions:

  1. In a mixing bowl, combine Dijon mustard, chopped jalapeños, mayonnaise, honey, and season with salt and pepper. Mix well and set aside.
  2. Preheat the grill or grill pan to medium-high heat.
  3. Grill the kielbasa sausages for about 5-7 minutes, turning occasionally, or until they are heated through and have grill marks.
  4. Split the hoagie rolls and place them on the grill for 1-2 minutes, cut side down, until lightly toasted.
  5. Place a grilled kielbasa in each toasted roll. Generously spread the zesty mustard-jalapeño mixture on top.
  6. Add sliced pickles and a sprinkle of fresh parsley if desired. Serve immediately.
