Ingredients:

  • 2 cups (250g) all-purpose flour, plus more for dusting
  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (3g) ground cinnamon
  • 1/2 teaspoon (1.5g) ground nutmeg
  • 1/4 teaspoon (0.75g) salt
  • 1 cup (240ml) vegetable oil
  • 2 cups (400g) granulated sugar
  • 2 large eggs
  • 2 teaspoons (10ml) vanilla extract
  • 4 cups (about 4 medium) peeled, cored, and chopped apples (Granny Smith, Honeycrisp, or a mix)
  • 1/2 cup (50g) chopped walnuts or pecans (optional)
  • 2 Tablespoons (30 ml) unsalted Butter
  • 1/4 cup (60 ml) milk
  • 1 cup (120 g) Powdered sugar
  • 1/2 teaspoon (2.5 ml) Vanilla Extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat together vegetable oil and sugar until well combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Gently fold in the chopped apples and nuts (if using) into the batter.
  6. Pour the batter into the prepared baking pan and spread evenly. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Prepare the glaze, and drizzle over the cooled cake. Let the glaze set before slicing and serving.
  8. Glaze: Combine butter, milk, and powdered sugar. Stir until smooth and add vanilla extract.
