Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) baking soda
- 1 teaspoon (3g) ground cinnamon
- 1/2 teaspoon (1.5g) ground nutmeg
- 1/4 teaspoon (0.75g) salt
- 1 cup (240ml) vegetable oil
- 2 cups (400g) granulated sugar
- 2 large eggs
- 2 teaspoons (10ml) vanilla extract
- 4 cups (about 4 medium) peeled, cored, and chopped apples (Granny Smith, Honeycrisp, or a mix)
- 1/2 cup (50g) chopped walnuts or pecans (optional)
- 2 Tablespoons (30 ml) unsalted Butter
- 1/4 cup (60 ml) milk
- 1 cup (120 g) Powdered sugar
- 1/2 teaspoon (2.5 ml) Vanilla Extract
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat together vegetable oil and sugar until well combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the chopped apples and nuts (if using) into the batter.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Prepare the glaze, and drizzle over the cooled cake. Let the glaze set before slicing and serving.
- Glaze: Combine butter, milk, and powdered sugar. Stir until smooth and add vanilla extract.
