Ingredients:

  • 2 1/2 cups (315g) all-purpose flour, plus more for dusting
  • 1 teaspoon (5g) salt
  • 1 cup (226g) unsalted butter, very cold and cut into 1/2-inch cubes
  • 1/2 cup (120ml) ice water
  • 1 tablespoon (15ml) apple cider vinegar (optional)
  • 6 medium (approximately 1.3 kg) Granny Smith apples, peeled, cored, and sliced 1/4-inch thick
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 tablespoons (15g) all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons (30g) unsalted butter, cut into small pieces
  • 1 tablespoon (15ml) lemon juice
  • 1 large egg
  • 1 tablespoon (15ml) milk or cream

Instructions:

  1. Combine flour and salt in a food processor (or large bowl). Pulse in cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water and vinegar (if using), pulsing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  3. In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat.
  4. On a lightly floured surface, roll out half of the dough into a 12-inch circle. Carefully transfer the dough to the pie dish, trimming and crimping the edges.
  5. Pour the apple filling into the pie crust. Dot the filling with the butter pieces. Roll out the remaining dough for the top crust. You can either place the entire rolled dough over the filling, trimming the edges, crimping with the bottom crust and slicing in the middle, or you can create strips for a lattice crust.
  6. If making a lattice top, weave dough strips over and under the filling. Trim excess.
  7. Whisk together the egg and milk/cream for the egg wash (if using). Brush the crust with the egg wash.
  8. Bake in a preheated oven at 400°F (200°C) for 15 minutes. Reduce the oven temperature to 350°F (175°C) and bake for another 35-45 minutes, or until the crust is golden brown and the filling is bubbling. You may want to cover the edges of the crust with foil if they are browning too quickly.
  9. Let the pie cool completely on a wire rack before slicing and serving this amazing apple pie.
