- Vegetable oil, for frying (about 4 cups/1 litre)
- 2 pounds fresh green beans, trimmed (US: about 900g, Metric: 900g)
- 2 tablespoons olive oil (US: 30ml, Metric: 30ml)
- 8 ounces cremini mushrooms, sliced (US: about 225g, Metric: 225g)
- 1 large shallot, finely chopped (US: about 50g, Metric: about 50g)
- 2 cloves garlic, minced (US: about 6g, Metric: 6g)
- 1/4 cup all-purpose flour (US: 30g, Metric: 30g)
- 3 cups chicken broth (US: 710ml, Metric: 710ml)
- 1/2 cup heavy cream (US: 120ml, Metric: 120ml)
- 2 tablespoons Worcestershire sauce (US: 30ml, Metric: 30ml)
- 1/4 teaspoon ground nutmeg (US: 1g, Metric: 1g)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (Optional)
Instructions:
- Prepare the Crispy Onions: Toss sliced onions with flour, salt, and pepper. Fry in batches in hot oil until golden brown and crispy. Drain on paper towels and set aside.
- Blanch the Green Beans: Bring a large pot of salted water to a boil. Blanch green beans for 3-4 minutes until bright green and slightly tender. Drain and shock in ice water. Drain well and set aside.
- Sauté the Aromatics: Heat olive oil in a large skillet or Dutch oven. Sauté mushrooms and shallot until softened and lightly browned. Add garlic and cook until fragrant.
- Make the Mushroom Sauce: Sprinkle flour over the mushroom mixture and cook for 1 minute. Gradually whisk in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until slightly thickened. Stir in heavy cream, Worcestershire sauce, and nutmeg. Season with salt and pepper to taste.
- Assemble the Casserole: Add blanched green beans to the mushroom sauce and toss to coat. Pour the mixture into a prepared baking dish.
- Bake the Casserole: Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until bubbly.
- Add the Crispy Onions: Sprinkle the crispy fried onions evenly over the casserole.
- Finish Baking: Bake for another 5-10 minutes, or until the onions are golden brown and the casserole is heated through.
