  • 3 cups chicken broth (US: 710ml, Metric: 710ml)
  • 1/2 cup heavy cream (US: 120ml, Metric: 120ml)
  • 2 tablespoons Worcestershire sauce (US: 30ml, Metric: 30ml)
  • 1/4 teaspoon ground nutmeg (US: 1g, Metric: 1g)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (Optional)

Instructions:

  1. Prepare the Crispy Onions: Toss sliced onions with flour, salt, and pepper. Fry in batches in hot oil until golden brown and crispy. Drain on paper towels and set aside.
  2. Blanch the Green Beans: Bring a large pot of salted water to a boil. Blanch green beans for 3-4 minutes until bright green and slightly tender. Drain and shock in ice water. Drain well and set aside.
  3. Sauté the Aromatics: Heat olive oil in a large skillet or Dutch oven. Sauté mushrooms and shallot until softened and lightly browned. Add garlic and cook until fragrant.
  4. Make the Mushroom Sauce: Sprinkle flour over the mushroom mixture and cook for 1 minute. Gradually whisk in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until slightly thickened. Stir in heavy cream, Worcestershire sauce, and nutmeg. Season with salt and pepper to taste.
  5. Assemble the Casserole: Add blanched green beans to the mushroom sauce and toss to coat. Pour the mixture into a prepared baking dish.
  6. Bake the Casserole: Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until bubbly.
  7. Add the Crispy Onions: Sprinkle the crispy fried onions evenly over the casserole.
  8. Finish Baking: Bake for another 5-10 minutes, or until the onions are golden brown and the casserole is heated through.
  9. Garnish (Optional): Garnish with fresh parsley, if desired. Let it stand for a few minutes before serving. Enjoy your green bean casserole without cream!
