Ingredients:

  • 1 ripe pineapple (approximately 2-3 pounds / 900-1400 grams)
  • ¼ cup (50 grams) brown sugar, packed
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt (optional)
  • Fresh mint leaves (optional) for garnish

Instructions:

  1. Cut off the top and bottom of the pineapple. Peel the skin, making sure to remove all eyes, and slice the fruit into ½-inch (1.25 cm) thick rounds.
  2. In a small bowl, combine the brown sugar, vanilla extract, and a pinch of salt (if using). Mix well to form a paste.
  3. Preheat your grill to medium-high heat (about 400°F / 200°C).
  4. Brush both sides of the pineapple slices with the brown sugar mixture, ensuring an even coating.
  5. Place pineapple slices on the grill and cook for 3-4 minutes per side or until grill marks appear and the sugar caramelizes.
  6. Remove from the grill when tender and caramelized but not mushy.
  7. Arrange on a plate, garnish with fresh mint leaves if desired, and serve warm.
