Ingredients:

  • 2 boneless, skinless chicken breasts (about 6 oz / 170g each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 2 medium ripe tomatoes, sliced 1/4-inch thick
  • 4 oz (115g) fresh mozzarella cheese, sliced 1/4-inch thick
  • 1/4 cup fresh basil leaves, roughly chopped
  • 2 tablespoons balsamic glaze (store-bought or homemade)

Instructions:

  1. Preheat grill to medium-high heat (around 375-400°F / 190-205°C). In a small bowl, combine olive oil, salt, pepper, garlic powder, and Italian seasoning. Brush the mixture all over the chicken breasts, ensuring even coverage.
  2. Place chicken breasts on the preheated grill. Grill for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer inserted into the thickest part of the breast. Remove from grill and let rest for 5 minutes.
  3. While the chicken is still warm, top each breast with tomato slices and mozzarella slices. (Optional: Cover with foil or place back on the grill (lid closed) for 1-2 minutes to gently melt the cheese.)
  4. Transfer the chicken to a serving platter. Sprinkle with fresh basil leaves. Drizzle generously with balsamic glaze. Serve immediately.
