Ingredients:
- 2 boneless, skinless chicken breasts (about 6 oz / 170g each)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 2 medium ripe tomatoes, sliced 1/4-inch thick
- 4 oz (115g) fresh mozzarella cheese, sliced 1/4-inch thick
- 1/4 cup fresh basil leaves, roughly chopped
- 2 tablespoons balsamic glaze (store-bought or homemade)
Instructions:
- Preheat grill to medium-high heat (around 375-400°F / 190-205°C). In a small bowl, combine olive oil, salt, pepper, garlic powder, and Italian seasoning. Brush the mixture all over the chicken breasts, ensuring even coverage.
- Place chicken breasts on the preheated grill. Grill for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer inserted into the thickest part of the breast. Remove from grill and let rest for 5 minutes.
- While the chicken is still warm, top each breast with tomato slices and mozzarella slices. (Optional: Cover with foil or place back on the grill (lid closed) for 1-2 minutes to gently melt the cheese.)
- Transfer the chicken to a serving platter. Sprinkle with fresh basil leaves. Drizzle generously with balsamic glaze. Serve immediately.
