Ingredients:

  • 400g Watermelon, cubed
  • 225g Halloumi Cheese, sliced
  • 1 small Red Onion, thinly sliced
  • 100g Rocket (Arugula) or mixed salad greens
  • 50g Kalamata Olives, pitted and halved (Optional)
  • 50g Feta Cheese, crumbled (Optional)
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lime Juice
  • 1 tablespoon Fresh Mint, finely chopped
  • 1 teaspoon Honey or Maple Syrup
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper

Instructions:

  1. Whisk together olive oil, lime juice, mint, honey/maple syrup, salt, and pepper in a small bowl. Set aside for the mint-lime dressing.
  2. Cut the watermelon into bite-sized cubes. Thinly slice the red onion.
  3. Heat grill or grill pan to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened.
  4. In a large mixing bowl, combine rocket (or salad greens), watermelon, red onion, olives (if using), and feta (if using) for the salad.
  5. Gently toss the salad with the mint-lime dressing. Arrange the grilled halloumi on top of the salad.
  6. Serve the salad immediately for the best flavour and texture.
