Ingredients:
- 400g Watermelon, cubed
- 225g Halloumi Cheese, sliced
- 1 small Red Onion, thinly sliced
- 100g Rocket (Arugula) or mixed salad greens
- 50g Kalamata Olives, pitted and halved (Optional)
- 50g Feta Cheese, crumbled (Optional)
- 3 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Fresh Lime Juice
- 1 tablespoon Fresh Mint, finely chopped
- 1 teaspoon Honey or Maple Syrup
- ½ teaspoon Sea Salt
- ¼ teaspoon Black Pepper
Instructions:
- Whisk together olive oil, lime juice, mint, honey/maple syrup, salt, and pepper in a small bowl. Set aside for the mint-lime dressing.
- Cut the watermelon into bite-sized cubes. Thinly slice the red onion.
- Heat grill or grill pan to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened.
- In a large mixing bowl, combine rocket (or salad greens), watermelon, red onion, olives (if using), and feta (if using) for the salad.
- Gently toss the salad with the mint-lime dressing. Arrange the grilled halloumi on top of the salad.
- Serve the salad immediately for the best flavour and texture.
