Ingredients:

  • 1 lb lean ground turkey
  • 1/2 small onion, finely diced
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz Velveeta or processed cheese, cubed
  • 4 oz cream cheese, softened and cubed
  • 1 can (14.5 oz) Rotel Diced Tomatoes and Green Chilies, undrained

Instructions:

  1. Heat your skillet over medium high heat. Add the ground turkey and break it apart with your spatula, cooking until the meat is no longer pink and has a light golden brown sear.
  2. Toss in the diced onions. Stir for 3-4 mins until the onions become translucent and soft.
  3. Sprinkle in the garlic powder, smoked paprika, salt, and pepper. Stir for 60 seconds until the spices smell toasted and fragrant.
  4. Turn your heat down to low. This is crucial to prevent the cheese from separating.
  5. Add the cubed Velveeta and cream cheese.
  6. Pour in the entire can of Rotel, including all the juices.
  7. Stir continuously until the cheese is completely melted and the mixture is a smooth, cohesive dip.
  8. Remove from heat immediately once smooth.
  9. Let it sit for 2 mins to thicken slightly before serving.
  10. Serve in the skillet or transfer to a warm bowl.
