Ingredients:
- 2 large overripe bananas
- 0.5 cup natural creamy peanut butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 cups rolled old fashioned oats
- 0.25 cup vanilla protein powder
- 1 tsp ground cinnamon
- 0.5 tsp sea salt
- 0.33 cup dark chocolate chips
- 2 tbsp hemp hearts
Instructions:
- In a large mixing bowl, mash the 2 overripe bananas with a sturdy fork until they reach a smooth, liquid-like consistency.
- Whisk in the peanut butter, maple syrup, and vanilla extract. Stir vigorously until the mixture is fully emulsified and glossy.
- Fold in the rolled oats, protein powder, cinnamon, and sea salt using a spatula until no dry pockets remain.
- Allow the dough to rest for 5 minutes. This hydration phase ensures the oats absorb moisture for a chewy texture. Fold in chocolate chips and hemp hearts after the rest.
- Preheat oven to 350°F (175°C). Use a cookie scoop to place 12 mounds on a parchment-lined baking sheet and gently flatten with a spoon.
- Bake for 12 minutes until the edges are golden-brown. Let cool on the pan to firm up before serving.
