Ingredients:

  • 1.25 lb boneless, skinless chicken breast, diced
  • 4 Tbsp fresh lemon juice
  • 4 Tbsp extra virgin olive oil (EVOO)
  • 4 fresh garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp Kosher salt
  • 0.5 tsp black pepper

Instructions:

  1. In a medium bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, oregano, thyme, salt, and pepper until slightly emulsified, forming the healthy chicken marinade.
  2. Add the diced chicken breast to the marinade. Ensure all pieces are well coated. Marinate for 20 to 30 minutes in the refrigerator. Do not exceed 2 hours to prevent the acid from toughening the meat.
  3. Preheat a grill or stovetop skillet to medium-high heat. Discard any remaining marinade liquid.
  4. Cook the chicken for 8 to 10 minutes, stirring frequently if using a pan, until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and fully cooked.
