Ingredients:
- 1.25 lb boneless, skinless chicken breast, diced
- 4 Tbsp fresh lemon juice
- 4 Tbsp extra virgin olive oil (EVOO)
- 4 fresh garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp Kosher salt
- 0.5 tsp black pepper
Instructions:
- In a medium bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, oregano, thyme, salt, and pepper until slightly emulsified, forming the healthy chicken marinade.
- Add the diced chicken breast to the marinade. Ensure all pieces are well coated. Marinate for 20 to 30 minutes in the refrigerator. Do not exceed 2 hours to prevent the acid from toughening the meat.
- Preheat a grill or stovetop skillet to medium-high heat. Discard any remaining marinade liquid.
- Cook the chicken for 8 to 10 minutes, stirring frequently if using a pan, until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and fully cooked.
