Ingredients:

  • 2 large yellow onions, thinly sliced (approx. 1 lb)
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1 1/2 cups plain non-fat Greek yogurt
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 tsp lemon juice
  • 2 tbsp fresh chives, finely chopped

Instructions:

  1. Heat the olive oil in a large non-stick skillet over medium-low heat. Add the sliced onions and salt.
  2. Cook the onions slowly, stirring occasionally, for 20–30 minutes until they reach a deep, mahogany-colored brown and smell sweet and nutty. Remove from heat and let cool completely.
  3. In a mixing bowl, whisk together the Greek yogurt, Worcestershire sauce, garlic powder, pepper, and lemon juice until the texture is completely smooth.
  4. Gently fold the cooled caramelized onions and chopped chives into the yogurt mixture using a spatula until combined.
