Ingredients:
- 2 large yellow onions, thinly sliced (approx. 1 lb)
- 1 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1 1/2 cups plain non-fat Greek yogurt
- 1 tbsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tsp lemon juice
- 2 tbsp fresh chives, finely chopped
Instructions:
- Heat the olive oil in a large non-stick skillet over medium-low heat. Add the sliced onions and salt.
- Cook the onions slowly, stirring occasionally, for 20–30 minutes until they reach a deep, mahogany-colored brown and smell sweet and nutty. Remove from heat and let cool completely.
- In a mixing bowl, whisk together the Greek yogurt, Worcestershire sauce, garlic powder, pepper, and lemon juice until the texture is completely smooth.
- Gently fold the cooled caramelized onions and chopped chives into the yogurt mixture using a spatula until combined.
