Ingredients:

  • 1 cup (225g) Plain Greek Yogurt (2% fat)
  • 1/2 tsp (2.5ml) Pure Vanilla Extract
  • 1 pinch Sea Salt
  • 1/2 cup (75g) Fresh Raspberries or Blueberries
  • 1 tbsp (10g) Chia Seeds
  • 1/2 tsp Lemon Zest
  • 1/4 cup (30g) Low-Sugar Grain-Free Granola
  • 1 tsp (5g) Toasted Pumpkin Seeds (Pepitas)
  • 1 tsp (7g) Raw Honey

Instructions:

  1. In a small mixing bowl, gently toss the fresh berries with the lemon zest and vanilla extract. Allow to sit for 2 minutes to macerate and release natural juices.
  2. Spoon half of the Greek yogurt into the base of a 12oz glass jar. Sprinkle the chia seeds in a single, even layer over the yogurt to create a moisture barrier.
  3. Add the macerated fruit mixture over the chia seed layer, followed by the remaining yogurt. Drizzle with honey if desired.
  4. Top with low-sugar granola and toasted pumpkin seeds immediately before serving to maintain maximum crunch.
