Ingredients:
- 4 slices whole wheat bread (approx. 100g), ½ inch thick
- 1 large egg (50g), lightly beaten
- ¼ cup unsweetened almond milk (60ml)
- 1 tablespoon pure maple syrup (15ml)
- ½ teaspoon ground cinnamon (2g)
- ¼ teaspoon vanilla extract (1ml)
- Pinch of salt (less than 1g)
- 1 tablespoon coconut oil (15ml)
Instructions:
- In a mixing bowl, whisk together the egg, almond milk, maple syrup, cinnamon, vanilla extract, and salt until well combined.
- Pour the egg mixture into a shallow dish. Dip each slice of bread into the mixture, ensuring both sides are evenly coated.
- Heat coconut oil in a non-stick frying pan over medium heat. Once the oil is hot, place the soaked bread slices into the pan, being careful not to overcrowd.
- Cook for 3-4 minutes per side, or until golden brown and cooked through. If the toast is browning too quickly, reduce the heat.
- Serve the Healthy French Toast immediately, topped with your favourite toppings.
