Ingredients:

  • 4 slices whole wheat bread (approx. 100g), ½ inch thick
  • 1 large egg (50g), lightly beaten
  • ¼ cup unsweetened almond milk (60ml)
  • 1 tablespoon pure maple syrup (15ml)
  • ½ teaspoon ground cinnamon (2g)
  • ¼ teaspoon vanilla extract (1ml)
  • Pinch of salt (less than 1g)
  • 1 tablespoon coconut oil (15ml)

Instructions:

  1. In a mixing bowl, whisk together the egg, almond milk, maple syrup, cinnamon, vanilla extract, and salt until well combined.
  2. Pour the egg mixture into a shallow dish. Dip each slice of bread into the mixture, ensuring both sides are evenly coated.
  3. Heat coconut oil in a non-stick frying pan over medium heat. Once the oil is hot, place the soaked bread slices into the pan, being careful not to overcrowd.
  4. Cook for 3-4 minutes per side, or until golden brown and cooked through. If the toast is browning too quickly, reduce the heat.
  5. Serve the Healthy French Toast immediately, topped with your favourite toppings.
