Ingredients:
- 1 can (14 oz or 400 g) hearts of palm, drained and sliced
- 3 cups mixed salad greens (e.g., arugula, spinach, romaine)
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced (about 1/4 cup or 40 g)
- Salt and pepper to taste
- 1/4 cup (60 ml) fresh orange juice
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (15 ml) apple cider vinegar
- 1 teaspoon honey or maple syrup
- Zest of 1 orange
- Salt and black pepper to taste
Instructions:
- In a mixing bowl, combine orange juice, olive oil, apple cider vinegar, honey, and orange zest. Whisk until fully combined. Season with salt and black pepper to taste.
- In a large salad bowl, layer the mixed greens. Top with sliced hearts of palm, diced avocado, cherry tomatoes, and red onion.
- Drizzle the prepared vinaigrette over the salad. Gently toss to coat all ingredients evenly.
- Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately, garnished with extra orange zest if desired.
