Ingredients:

  • 1 can (14 oz or 400 g) hearts of palm, drained and sliced
  • 3 cups mixed salad greens (e.g., arugula, spinach, romaine)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced (about 1/4 cup or 40 g)
  • Salt and pepper to taste
  • 1/4 cup (60 ml) fresh orange juice
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Zest of 1 orange
  • Salt and black pepper to taste

Instructions:

  1. In a mixing bowl, combine orange juice, olive oil, apple cider vinegar, honey, and orange zest. Whisk until fully combined. Season with salt and black pepper to taste.
  2. In a large salad bowl, layer the mixed greens. Top with sliced hearts of palm, diced avocado, cherry tomatoes, and red onion.
  3. Drizzle the prepared vinaigrette over the salad. Gently toss to coat all ingredients evenly.
  4. Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately, garnished with extra orange zest if desired.
