Ingredients:
- 1 lb ground beef (or turkey/chicken)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 2 cups frozen corn
- 1.5 cups shredded cheddar cheese
- 1 package taco-sized flour tortillas (about 8 tortillas)
- 1 cup sour cream (optional, for topping)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks.
- Add chopped onion and garlic; sauté until the onion is translucent.
- Stir in taco seasoning, salsa, black beans, and corn; cook until heated through.
- Layer 4 tortillas at the bottom of the baking dish, overlapping slightly.
- Spoon half of the meat mixture over the tortillas, followed by half the cheese.
- Repeat layers with remaining tortillas, meat mixture, and cheese.
- Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving. Top with sour cream if desired.
