Ingredients:

  • 1 lb ground beef (or turkey/chicken)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 2 cups frozen corn
  • 1.5 cups shredded cheddar cheese
  • 1 package taco-sized flour tortillas (about 8 tortillas)
  • 1 cup sour cream (optional, for topping)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks.
  3. Add chopped onion and garlic; sauté until the onion is translucent.
  4. Stir in taco seasoning, salsa, black beans, and corn; cook until heated through.
  5. Layer 4 tortillas at the bottom of the baking dish, overlapping slightly.
  6. Spoon half of the meat mixture over the tortillas, followed by half the cheese.
  7. Repeat layers with remaining tortillas, meat mixture, and cheese.
  8. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving. Top with sour cream if desired.
