Ingredients:

  • 3 large ripe bananas, mashed
  • 1/3 cup unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by greasing it or lining with paper liners.
  3. In a large bowl, mash the bananas with a fork until smooth.
  4. Stir in the melted butter until well combined.
  5. Add the beaten egg and vanilla extract, mixing thoroughly.
  6. Sprinkle the baking soda and salt over the mixture, then stir to combine.
  7. Mix in the sugar gradually, followed by the flour, until just incorporated.
  8. If using, fold in the chopped walnuts or pecans gently.
  9. Scoop the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  11. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
