Ingredients:
- 3 large ripe bananas, mashed
- 1/3 cup unsalted butter, melted
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin by greasing it or lining with paper liners.
- In a large bowl, mash the bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Add the beaten egg and vanilla extract, mixing thoroughly.
- Sprinkle the baking soda and salt over the mixture, then stir to combine.
- Mix in the sugar gradually, followed by the flour, until just incorporated.
- If using, fold in the chopped walnuts or pecans gently.
- Scoop the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
