Ingredients:
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, melted (plus extra for greasing)
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup (180ml) milk
- 1 cup (175g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and grease the muffin tin or line with paper liners.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- In a medium bowl, whisk together melted butter, eggs, vanilla extract, and milk until smooth.
- Pour the wet ingredients into the dry ingredients, folding gently with a spatula until just combined (do not overmix).
- Fold in ¾ cup of the chocolate chips, reserving the remaining for topping.
- Using a large spoon or ice cream scoop, fill muffin cups about 2/3 full with batter.
- Sprinkle reserved chocolate chips over the top of the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes then transfer to a cooling rack to cool completely.
