Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (approx. 300g) peeled and diced apples (e.g. Bramley, Granny Smith, or Cox)
  • 1/2 cup (120ml) milk (or non-dairy alternative)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, combine granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
  4. Slowly add the dry ingredients to the wet mixture. Stir until just blended.
  5. Gently fold in the diced apples and milk until evenly distributed.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
