Ingredients:
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed brown sugar
- 1/2 cup (115g) unsalted butter, melted
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups (approx. 300g) peeled and diced apples (e.g. Bramley, Granny Smith, or Cox)
- 1/2 cup (120ml) milk (or non-dairy alternative)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, combine granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
- Slowly add the dry ingredients to the wet mixture. Stir until just blended.
- Gently fold in the diced apples and milk until evenly distributed.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
