Ingredients:
- 1 ½ cups all-purpose flour

- ½ cup unsalted butter, chilled and cubed
- 4-6 tbsp ice water
- 4 cups fresh peaches, peeled and sliced
- ¾ cup granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ½ cup brown sugar
- ½ tsp cinnamon
- ¼ cup unsalted butter, melted
- Pinch of salt
Instructions:
- In a bowl, combine flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Add ice water, mixing until dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes.
- In a large bowl, mix sliced peaches, sugar, lemon juice, cornstarch, cinnamon, nutmeg, and vanilla. Let sit for 10-15 minutes to allow juices to combine.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the chilled dough into a circle to fit the pie dish. Transfer to the dish and trim edges.
- Pour the peach filling into the prepared crust.
- In a bowl, combine flour, brown sugar, cinnamon, melted butter, and salt until crumbly. Sprinkle evenly over the filling.
- Bake in preheated oven for 45-50 minutes, or until topping is golden brown and filling bubbles. Let cool on a rack for at least 30 minutes before serving.
