Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ tsp salt
  • 1 tsp granulated sugar
  • ½ cup unsalted butter, chilled and cubed
  • 4-6 tbsp ice water
  • 4 cups fresh peaches, peeled and sliced
  • ¾ cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup unsalted butter, melted
  • Pinch of salt

Instructions:

  1. In a bowl, combine flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Add ice water, mixing until dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  2. In a large bowl, mix sliced peaches, sugar, lemon juice, cornstarch, cinnamon, nutmeg, and vanilla. Let sit for 10-15 minutes to allow juices to combine.
  3. Preheat the oven to 375°F (190°C).
  4. On a floured surface, roll out the chilled dough into a circle to fit the pie dish. Transfer to the dish and trim edges.
  5. Pour the peach filling into the prepared crust.
  6. In a bowl, combine flour, brown sugar, cinnamon, melted butter, and salt until crumbly. Sprinkle evenly over the filling.
  7. Bake in preheated oven for 45-50 minutes, or until topping is golden brown and filling bubbles. Let cool on a rack for at least 30 minutes before serving.
