Ingredients:

  • 175g Unsalted Butter, cut into cubes
  • 100g Light Brown Sugar, packed
  • 4 tbsp Golden Syrup
  • ¼ tsp Ground Ginger
  • 250g Rolled Oats (not instant)
  • 75g Dried Cranberries
  • 50g Flaked Almonds, lightly toasted

Instructions:

  1. Preheat oven to 180°C (350°F, Gas Mark 4). Line an 8-inch square baking tin with parchment paper.
  2. In a saucepan, melt butter, brown sugar, and golden syrup over low heat. Stir until smooth.
  3. Remove from heat and stir in ginger, oats, cranberries, and almonds. Mix well.
  4. Press mixture firmly and evenly into the prepared baking tin.
  5. Bake for 25-30 minutes, or until golden brown around the edges.
  6. Let cool completely in the tin before lifting out. Cut into 12 squares.
