Ingredients:
- 175g Unsalted Butter, cut into cubes
- 100g Light Brown Sugar, packed
- 4 tbsp Golden Syrup
- ¼ tsp Ground Ginger
- 250g Rolled Oats (not instant)
- 75g Dried Cranberries
- 50g Flaked Almonds, lightly toasted
Instructions:
- Preheat oven to 180°C (350°F, Gas Mark 4). Line an 8-inch square baking tin with parchment paper.
- In a saucepan, melt butter, brown sugar, and golden syrup over low heat. Stir until smooth.
- Remove from heat and stir in ginger, oats, cranberries, and almonds. Mix well.
- Press mixture firmly and evenly into the prepared baking tin.
- Bake for 25-30 minutes, or until golden brown around the edges.
- Let cool completely in the tin before lifting out. Cut into 12 squares.
