Ingredients:

  • 1 cup (200g) granulated white sugar
  • 1.5 tablespoons (30g) unsulphured molasses

Instructions:

  1. Place your granulated white sugar in a large stainless steel mixing bowl and create a small well in the center of the sugar.
  2. Pour the unsulphured molasses directly into the center well.
  3. Using a fork or a stiff silicone spatula, begin 'mashing' the molasses into the sugar, pressing against the sides of the bowl to incorporate.
  4. Continue to stir and press for 3 to 5 minutes until the sugar transforms from white to a uniform mahogany color.
  5. If small molasses clumps remain, rub the sugar between your fingertips; the heat from your hands will liquify the molasses and help it coat every individual crystal.
  6. Transfer the finished sugar to an airtight glass jar for storage.
