Ingredients:

  • 450g yellow onions, thinly sliced
  • 28g unsalted butter
  • 15ml olive oil
  • 3g granulated sugar
  • 3g salt
  • 240g full-fat sour cream
  • 60g mayonnaise
  • 5ml Worcestershire sauce
  • 15ml lemon juice
  • 3g onion powder
  • 2g garlic powder
  • 1g cracked black pepper
  • 4g fresh chives, finely chopped

Instructions:

  1. Heat butter and olive oil in a 12-inch stainless steel or cast-iron skillet over medium-high heat. Add sliced onions and salt, sautéing for 5–7 minutes until softened.
  2. Sprinkle in the granulated sugar and stir constantly for another 8–10 minutes until onions reach a mahogany color and smell nutty. Remove from heat and let cool completely.
  3. In a medium mixing bowl, whisk together the sour cream, mayonnaise, Worcestershire sauce, and lemon juice until the texture is smooth and glossy.
  4. Gently fold the cooled caramelized onions into the cream base. Stir in the onion powder, garlic powder, and black pepper.
  5. Fold in half of the chopped chives and garnish the top with the remaining chives.
