Ingredients:
- 450g yellow onions, thinly sliced
- 28g unsalted butter
- 15ml olive oil
- 3g granulated sugar
- 3g salt
- 240g full-fat sour cream
- 60g mayonnaise
- 5ml Worcestershire sauce
- 15ml lemon juice
- 3g onion powder
- 2g garlic powder
- 1g cracked black pepper
- 4g fresh chives, finely chopped
Instructions:
- Heat butter and olive oil in a 12-inch stainless steel or cast-iron skillet over medium-high heat. Add sliced onions and salt, sautéing for 5–7 minutes until softened.
- Sprinkle in the granulated sugar and stir constantly for another 8–10 minutes until onions reach a mahogany color and smell nutty. Remove from heat and let cool completely.
- In a medium mixing bowl, whisk together the sour cream, mayonnaise, Worcestershire sauce, and lemon juice until the texture is smooth and glossy.
- Gently fold the cooled caramelized onions into the cream base. Stir in the onion powder, garlic powder, and black pepper.
- Fold in half of the chopped chives and garnish the top with the remaining chives.
