Ingredients:

  • 2 cups chilled pomegranate juice
  • 1 cup frozen mixed berries
  • 1 tbsp fresh lemon juice
  • 1 cup frozen low-fat vanilla bean ice cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup fresh berries
  • 1 sprig fresh mint

Instructions:

  1. Chill the pomegranate juice in the freezer for 30 minutes before starting to ensure the drink remains cold without dilution.
  2. If using a blender: Combine the chilled juice, frozen berries, and frozen ice cream. Start on the lowest speed and quickly increase to high, blending until the mixture is smooth and reaches a thick, swirling vortex.
  3. If using a Ninja Slushi: Pour the juice and almond milk into the pitcher, add the frozen ice cream, and select the MILKSHAKE setting. Churn until the desired consistency is reached.
  4. Perform a consistency check; the mixture should reach a 'soft-peak' state. If too thick, pulse in additional almond milk until smooth.
  5. Pour into chilled glassware and garnish with fresh berries and a sprig of fresh mint.
