Ingredients:
- 8 oz salami, thinly sliced
- 8 oz pepperoni, thinly sliced
- 8 oz capicola or genoa ham, thinly sliced
- 8 oz provolone cheese, thinly sliced
- 8 Italian sub rolls
- 4 cups shredded iceberg lettuce
- 2 medium tomatoes, thinly sliced
- 1/2 small red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- salt to taste
- black pepper to taste
Instructions:
- In a large mixing bowl, combine the shredded lettuce, sliced tomatoes, and red onion.
- In a small separate jar or bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, and red pepper flakes.
- Pour the dressing over the vegetables and toss gently until every piece is glistening. Set aside for 5 minutes to let the flavors meld.
- Slice your rolls lengthwise, leaving a small hinge on one side.
- Layer the meats by folding the salami, pepperoni, and capicola into ribbons. Top the meat layer with 1-2 slices of provolone cheese.
- Spoon a generous portion of the dressed veggie mix onto the cheese and press the top of the roll down slightly.
- For a cold sub, serve immediately. For a baked version, place on a baking sheet and broil for 3-5 minutes until the cheese is bubbling.
