Ingredients:

  • 8 oz salami, thinly sliced
  • 8 oz pepperoni, thinly sliced
  • 8 oz capicola or genoa ham, thinly sliced
  • 8 oz provolone cheese, thinly sliced
  • 8 Italian sub rolls
  • 4 cups shredded iceberg lettuce
  • 2 medium tomatoes, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • salt to taste
  • black pepper to taste

Instructions:

  1. In a large mixing bowl, combine the shredded lettuce, sliced tomatoes, and red onion.
  2. In a small separate jar or bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, and red pepper flakes.
  3. Pour the dressing over the vegetables and toss gently until every piece is glistening. Set aside for 5 minutes to let the flavors meld.
  4. Slice your rolls lengthwise, leaving a small hinge on one side.
  5. Layer the meats by folding the salami, pepperoni, and capicola into ribbons. Top the meat layer with 1-2 slices of provolone cheese.
  6. Spoon a generous portion of the dressed veggie mix onto the cheese and press the top of the roll down slightly.
  7. For a cold sub, serve immediately. For a baked version, place on a baking sheet and broil for 3-5 minutes until the cheese is bubbling.
